Ramen Lab’s Incubator Program Will Attract Guest Chefs From All Over the World

Sun Noodle is on quest to make American ramen taste even better: This May, the company will launch a new incubator program at Ramen Lab, through which chefs from all over the world will travel to Nolita and cook their unique ramen dishes. This will give New Yorkers the chance to try all kinds of new, regional ramen, while also providing the cooks with the tools they need to open their own restaurants.

The first scheduled pop-up, beginning on May 11, is Ichicoro Ramen, and Noel Cruz will refine his recipes for tonkotsu and soba before he opens his restaurant in Tampa. Ramen Lab’s executive chef, Jack Nakamura, will be on hand to provide assistance, and he’s also launching a separate consulting practice, called Ramen Tech. That’s a degree that will surely stand out on any résumé.
