Newly Installed RN74 Chef Adam Sobel Wins at Cochon

The Prince of Porc prize at yesterday’s S.F. edition of Cochon 555 went to newly hired RN74 chef Adam Sobel, whose team spent the last week working fourteen-hour days to craft his special pork creations in addition to running the restaurant. The dishes included pork katsu with shaved octopus; Chang Mai boar meatballs; seven-day brine pastrami; a pig and apple summer sausage; and a dessert dubbed Fat Elvis Return: a tuille of peanut butter, smoked pig, banana chocolate and passion fruit caramel.
