More Details on Ramen Shop, Due in Rockridge Later This Year

Grub Street broke the news earlier this summer about the new ramen-shop project from former Chez Panisse host Sam White at 5812 College Avenue in Oakland. Today we find out that it will be called, simply, Ramen Shop, and they're hoping to open in late 2012. As we reported earlier, White and partners Jerry Jaksich and Rayneil De Guzman are bringing over a consulting ramen chef from Sapporo, Japan named Jun Furukawa to help them establish their perfect broth and noodle combo. And as the Chron adds, they plan to have a full bar, a snack menu, and they'll be spit-roasting pork on-site for that broth. Also, they don't plan on mimicking a particular regional style of ramen, but rather borrowing and adapting a style, based on local ingredients. "We're going to try to draw from the traditions of Japan and the styles we tasted, but, at the same time, draw from the Chez [Panisse] way — similar to what they did with European cuisine," says De Guzman, who himself spent nine years in the Chez Panisse kitchen.

Ramen Shop will join the much publicized brick-and-mortar expansion of Hapa Ramen, which will just be called Hapa and which hopes to open later this year as well in SF at 1527 Fillmore, next door to State Bird Provisions. And in case you didn't notice this trend, Japanese chain Men Oh Tokushima Ramen just opened on Geary, Nombe added some pretty delicious ramen to its menu earlier this year, and KenKen Ramen went from pop-up to perm on 18th Street last December.
