Local sommelier and St. Vincent owner David Lynch has lately had a freelance gig penning a wine column for Bon Appétit, in case you didn’t know. He’s previously discussed his dislike for big, bible-length wine lists, and in the new issue he offers his advice on putting together your home wine list. First off, Crémant de Bourgogne is a better value than Champagne, and often just as good. Also, you should have some Madeira on hand since it goes with almost anything, and stop thinking that you need some big, expensive red to go with your steak. Lynch recommends “lighter reds — fat-cutting, palate-enlivening foils” like Gamay, Mencia, or Sangiovese. [Bon App]
