Watch Staffan Terje, Hiro Sone, and Other Local Chefs Cook In the Woods With Foraged Mushrooms
This pretty video, by photographer Todd Selby, comes to us via the NYT's T Mag, which lately has been letting Selby do a whole series called The Edible Selby, touring around the world and shooting video of chefs doing their thing. Representing the Bay Area we have renowned forager Connie Green taking chefs Hiro Sone, Lissa Doumani (both of Ame and Terra), Staffan Terje (Perbacco), Todd Humphries (Kitchen Door), and chef Sean O'Toole (Quince and Cotogna) on a mushroom hunt after which they all cook something on a camp stove involving foraged mushrooms.
Doumani decides to do something inspired by her Lebanese heritage, stuffing morels with lamb kibbe and serving them with a parsley salad and yogurt. Meanwhile, Sone stuffs his with contraband foie gras (which may have still been legal when this was shot), and Terje does a dish of porcini mushrooms and peaches sautéed with wine and cream and served over croutons.
