Latvian Students Get a Taste of Vetri’s Eatiquette

Marc Vetri’s Eatiquette, a program the chef developed that revolutionizes school lunches, is possibly one of the very few good things happening in Philly schools right now. And sadly, as the School District of Philadelphia continues its downhill skid toward certain doom, only two area schools, both of which are charter schools, have adopted the Vetri approach to cafeteria operations. Today, students visiting from Latvia will experience an Eatiquette-style lunch — healthy, organic dishes wrought from farm-fresh ingredients and served family style at round tables to facilitate conversation — courtesy of Vetri and partner Jeff Michaud, at People For People Charter School. It’s all tied to the National Constitution Center’s program At the Table: Connecting Culture, Conversation and Service in Latvia and the U.S.
