The March issue of Bon Appétit just hit newsstands, and in it we find the great Lady Waters featured alongside her most prized Edible Schoolyard board member Jake Gyllenhaal, shovels in hand. There’s a full-page shot of a flour-dusted Chad Robertson, master baker at Tartine, whose bread is called the best in America by blurb-writer Daniel Patterson. And there’s a prominently featured quote from Bi-Rite Market owner Sam Mogannam who recommends Baia Pasta and Community Grains as “rival[ing] Italy’s best.” Below, Bon App’s video of Robertson, who’s named their Rising Star.

“I don’t really make bread as this big spiritual thing, like some people do,” says Robertson. “I’d like to make bread that somehow adds something new or different to the culture of what’s out there.”
