St. Vincent Hires a Chef and a Cicerone

It was only in November that we heard that former Quince wine director David Lynch was breaking out on his own with a restaurant called St. Vincent, in the former Heart space (1270 Valencia at 24th). Now the Scoop relays the news that they’ve hired a chef: Bill Niles, who’s worked at Bar Tartine under both Chris Kronner and Nick Balla. The menu, which is still in development, will be focused on “hearty, polished California fare.” Lynch has also hired a certified cicerone (beer sommelier) away from Monk’s Kettle, Sayre Piotrkowski, who’ll be in charge of the beer list and an all-brewery-direct draft program, ensuring the freshest beer possible.
