Ippuku, Quince, Chez Panisse to Be First to Feature Fresh S.F. Bay Herring

You should soon be seeing fresh San Francisco Bay herring on menus across town for the first time as the Department of Fish and Game recently revised regulations that had sent all the little fish off to Japan to be stripped for their roe — used for kazunoko, a traditional New Year’s Day delicacy that symbolizes fertility and prosperity. As SFoodie reports, local herring hasn’t been for sale in these parts in many years, and among the first restaurants buying up the fish in are Quince, Chez Panisse, Nettie’s Crab Shack, and Ippuku.
