Calling all fans of mortadella spuma, pork consommé, and coffee-bacon cream: Mark your calendars because the pigastic roving pork fest, Cochon 555, is back. The lineup for the first California event will pit the reigning King and Queen of Porc, John Stewart and Duskie Estes of Zazu, against Chris L’Hommedieu of Michael Mina, Michael Tuohy of Dean & Deluca, Lars Kronmark of the Culinary Institute of America, and Mark Dommen of One Market. Pork enthusiasts can get tickets to the event now; it takes place at an undisclosed location on Sunday, January 29, 2012.
