Polk Street Station Soon to Become Fourth Wave Coffee

Finally we get word on who’s nabbed the highly visible corner spot at Polk and Pine that was long home to the timeworn Polk Street Station diner, shuttered now for several years. It’s going to be a high-end coffee place called Fourth Wave Coffee — which is meant to be both a play on the term “third-wave coffee” and a surfing reference, because owner Brian Kramer is an avid surfer. Expect to see surfboards on the walls, and something totally novel for a fancy coffee joint in S.F.: speedy service. Kramer tells Tablehopper that he’ll be using “an Oakland roaster” and that he wants to give everyone “the best possible coffee in each individual cup” without the fifteen-minute wait.
