Will New FDA Regulations Affect Thomas Keller’s Line of Gluten-Free Flour?

You may have heard that Thomas Keller is marketing a gluten-free flour now. It’s being sold through Williams-Sonoma, and it’s called Cup4Cup. It’s a proprietary-blend pastry flour that’s supposed to act just like real flour, created by French Laundry pastry chef Lena Kwak. Well, the FDA is about to impose new, tighter regulations on products that claim to be gluten-free, because as many celiac disease sufferers have found, you can’t always trust the label. But Keller’s blend — white and brown rice, tapioca and potatoes, with potato starch, cornstarch, and milk powder, per the New York Times — appears to be in the clear regardless.
