There’s been plenty of buzz about former Dry Creek Kitchen cook and pop-up chef Mateo Granados and his downtown Healdsburg restaurant project, now called Cocina Latina. He’s brought on bar star Scott Beattie (Cyrus, Spoonbar, Plum Bar) to do the cocktails, and Granados will be serving versions of some of the Yucatan-influenced dishes he’s been doing at his underground dinners in wine country. The opening is now scheduled for the week of September 12.*

On the menu, which hasn’t yet been released, expect to see stuff like stuff like Black Sheep Farm suckling pig, as well as more Yucatecan specialties using local ingredients, like a sea salt tortilla stuffed with homemade duck chorizo, as well as his popular cochinita pibil.

Update: He’ll be a couple of final pop-up dinners this week and next — tonight at the lovely gardens at Quivira Vineyards, and next Thursday and Friday at Preston Vineyards. Make reservations here.

* This has been updated to reflect the opening date, which had originally been printed as September 5.
