“One thing I will never consider doing again when opening a restaurant,” says Anthony Strong in a new video by One Viisiion, “Is even think of sleeping in… Sleep when you’re dead. Wake up as early as you can and work as late as you can if you want to do it right.” Strong gives a quick tour of new Mission-based Roman osteria, Locanda, and talks about his vision for the place, which includes trying to please Roman purists as well as “the kid off the street who just wants a good pasta.” And in case you’re wondering, those long brown thread things in the meat case are house-made pork jerky, which is served as a bar snack.
