Chef de cuisine Amy Glaze is no longer in the employ of Citizen Cake, and chef-owner Elizabeth Falkner has hired a replacement, Shaun McGrath, who most recently was working in Massachusetts, but was previously a sous chef at Scott Howard. Says Falkner, “Amy turned out not to be the greatest fit, but it was totally amicable and I’m sure she’s already got something else lined up.” Glaze’s fine dining background seems to have led to dishes that Falkner, ultimately, found too complicated for the aesthetic of Citizen Cake. “Shaun started a week ago and we’re already re-working the menu,” she says. “We’re really excited.” Falkner made no mention of Jonathan Kauffman’s lackluster review of the savory half of the restaurant-patisserie, but the timing of Glaze’s departure, about a month ago, was notably close.
