Marrow Matters: San Francisco’s Best Bone Marrow Dishes

Bone marrow — that buttery, decadent, completely not-good-for-you stuff scooped from the center of beef shanks — is a classic French bistro item, and in the age of whole-animal everything it’s pretty in vogue to have some preparation of bone marrow on one’s menu. We canvassed the Bay Area for the best there was, and here’s what we came up with: a collection of nine dishes that show off our region’s ingenuity when it comes to modernizing a classic.
