Fast on the heels of the Vanity Fair interview where offal-obsessed chef Chris Cosentino discussed how he would have made Lady Gaga’s meat dress (think tripe, with caul fat stockings), the Incanto exec performs for the cameras at Feast and dices up some of his famous beef heart tartare in honor of Valentine’s Day (see also Kauffman’s recommendations of heart dishes around town). As he says, compared to regular beef tartare, the heart muscle has “a richer mouthfeel, and a little bit of a crunch.” Crunch? Anyway, we should have expected as much.
