We were just down in L.A. taking in some food sights, and look what we had served to us at Rivera! Chef John Sedlar's popular downtown restaurant is both a mash-up of modern Latin cooking and a tribute to eighties chrome-covered style and whimsy. Appropriate, then, that the stencil-dusted spices on our plate were a eulogy to the bible of haute cuisine and early champion of California cooking. And this comes just a week after the last vestiges of Gourmet's test kitchens were pushed aside to let Bon Appétit move in. Below, another plate, which featured a different stencil.
At one point, this said "Don't Stop 'Till You Get Enough —Madoff." This is the after-shot. It's like art, right?
