Have you ever tried to get a table at Pizzeria Delfina on any given night after 6 p.m.? Yeah, it requires much Zen-fueled patience. The Chron looks into the trend of casual places that have tried to do the walk-in-only thing, only to find they started pissing people off, and alienating old people. “We realized very quickly that if we wanted to have regulars, they needed to be able to make plans,” says Bruce Hill, owner of Zero Zero, which changed their no-reservations policy shortly after opening.
