Douglas Keane's new Healdsburg steakhouse, Shimo Modern Steak, just opened to the public last week, and Keane tells us they just sold their first big bunch of Australian Wagyu ($20/oz) last night. "We'd barely sold any and then we sold out of it last night by surprise. All two pounds." He also notes that diners have by and large gone for the more Japanese-influenced side dishes and sauces over the standard steakhouse fare, which has led them to make some changes to the opening menu, doing their Brussels sprouts now with sake and daikon instead of bacon, and Keane's replaced the potato rösti on the menu with an okonomiyaki a Japanese potato pancake made with a grated mountain yam, cabbage, pickled ginger, scallion, and fried with dashi batter coating. Check out a few shots of the inside, which is spare and austere and very Japanese. A temple of beef, if you will. There are bare wood tables, adorned simply with napkins and very fancy, very sharp knives. See for yourself.
