Ever vigilant about every new cart and truck in town, John Birdsall at SFoodie tells us this week about two new mobile food operations in our midst: Señor Sisig, which serves Filipino-inspired tacos and street food; and Crispy Tacos from former Hotel Nikko sous chef Matthew Griffin. Señor Sisig is still launching and has only made it to one S.F. event thus far.

(P.S. sisig, which the truck is “heavily adapting,” is a dish traditionally made of fried-up boiled bits of pig’s head.)

Crispy Tacos pops up regularly at three different spots in SoMa, serving up tasty sounding taco fillings like brisket, chicken tinga, seitan poached in dark beer and sambal, and bacon al pastor — the latter is Birdsall’s favorite.

Crispy Tacos parks weekdays 9 to 10 a.m. at 501 Beale (at Bryant); 10:30 a.m. to noon at the corner of Second and Bryant Streets; and noon to 2:30 p.m. at 290 Townsend near Fourth.
