Loretta Keller’s Goat Tongue Impresses At The Beards

Loretta Keller didn’t win the Best Chef, Pacific awards at the Beards last night, but her food was victorious. Keller served Bolinas goat’s tongue with fenugreek, tomato chutney, Meyer lemon, and mint – combining creamy toungue, fresh vegetables, crisped rice, and a suggestion of curry. Keller prepared the dish at friend Akhtar Nawab’s restaurant, Elettaria. “We went in this morning. We sort of took over the kitchen and knocked it out. He [Nawab] was just great. He knew what to do, ordered a car. It was flawless,” Keller said. “Everyone’s really curious about the goat’s tongue. It’s a little different from the Mediterranean that we usually do. Like if Coco500 took a vacation in India.”
