Incanto's Alamo

The heady days of 2003 may be back, as militant animal rights types have apparently threatened Incanto chef/owner Chris Cosentino with protests after he refused to stop serving foie gras. From Offal Good:

The response was an angry, “We are coming to protest be prepared” . After a few conversations with my business partner, Mark Pastore, we have come to agree that this will be our “Alamo” if they come to fight.

An aside: We have no beef (sorry) with those protesters — the foie gras thing is a worthy debate — but we frankly think they could have chosen a better restaurant to pick on. Thing about eating meat is, if you're going to do it, it's best to be honest about it and eat every part of the animal, which is what Cosentino's offal-centric menu is all about. Also, it's best to get local meat that has been raised sustainably, which Cosentino is also about. It's going to be hard to elicit sympathy picking on a guy who's whole gimmick is an emphasis on personal and social responsibility. Vegetarians hating on Incanto smacks of being "grossed out." That ain't going to sway a soul.
