Where Will We Be Without Bill Niman?

Niman's products show up in restaurants and home kitchens. Trader Joe's carries these bacon-wrapped pork chops.

After reading yesterday's San Francisco Chronicle article on Bill Niman's ouster from his famed Niman Ranch meat, we got to wondering how the bad blood with which the former honcho left will affect the San Francisco dining scene. From the Chron:

The 64-year-old Bolinas man said he can live with losing the business he built from scratch. But he can't stand quietly by, he says, while the new owners fundamentally change the brand that influenced an entire food movement. He refuses to eat their products.
Will that mean that local restaurants who currently use Niman as a reliable source for high-quality meats will turn elsewhere? A quick keyword search on our own site revealed 52 menus listing Niman products by name, including Acme Chophouse, Delfina, and Hayes Street Grill. Losing even a fraction of such high-end customers could really cost Niman Ranch's future owners. Perhaps Bill Niman will get the last laugh after all.
